One of my recent favorite masala to use in curries. Goan style Balchao Trifecta Potatoes And Eggs with a cumin cilantro rice. Pan fried potatoes are cooked in a spicy balchao masala in coconut milk sauce. It’s spice, creamy and so so comforting. Skip the eggs for a full on vegan meal. An easy, impressive potato-egg dish to make for a crowd or just for the two of you! Check stories for a step by step. • • • Recipe: 2 sweet potatoes (diced) 2 yam (diced) 1 Yukon gold (diced) 1 onion 2 tomatoes 3 tbsp balchao masala(recipe on blog) 1 can or 16 oz light coconut milk Hard boiled eggs(optional) 4 tbsp olive or veg oil Method: Grind the onion and tomatoes to a paste. Keep a large pan and add oil. Add the onion tomato mixture and sauté and cook on medium heat for 10 minutes. Be careful, this mixture spits. Add the balchao masala and add 1 cup of water. Simmer and cook for 10 minutes. While that is cooking, pan fry the potatoes on high to get the skin/outsides crispy. Do not cook it fully. Keep aside. Once you see the oil ooze out of the curry, add another 1 cup of water, coconut milk and potatoes. Simmer, cover and cook for another 10 min. Take it off the heat and the eggs. I didn’t realize there was a balchao masala? I’ve had balchao on its own though. It does look great 👍🏾
